YUM!

This is a simple, delicious meal that is very common in Uruguay and Argentina. We got the recipe long ago from Mark's Oma, who lived in Uruguay for years and years (for those of you who don't know, Mark's mom grew up there). We love this recipe, and realized when we were there how common it is.

Spinach Pie (Torta Pascualina)

2 unbaked pie shells
2 bunches spinach, chopped
1 onion, chopped
2 T. oil
1/4 t. nutmeg
1 t. oregano
1/2 t. salt
2-4 eggs
1 c. shredded swiss cheese

Saute onion in oil. When transparent, add spinach and saute until cooked. Drain.

Mix all but eggs together and fill one pie crust. Make indentations in the filling, and crack eggs in. (interesting bit: Oma's recipe card says "Argentinians beat the eggs into the filling, Uruguayans don't) Cover with second pie crust.

Bake for approx. 40 minutes at 350, until browning on top.

We learned when we had this is Uruguay that it is served with mayonaise on the side.
