SUMMER

Here are a few things that are keeping us happy in the summer heat:

Corn on the cob: This experience does not live up to my childhood memories of driving in the car with my mom to buy corn from the farmer, taking it home and immediately shucking it by the garden, leaving a soft path for walking on, smelling the distinct fresh corn smell in the heat. Shucking the corn that we bought from the store with Mali still brings me those memories. I love sitting with her and being with her while we're both busy with a task. There's something very calming about it.



Painting on the deck, because it's (amazingly) below 90 outside!



Homemade vanilla pudding pops: I'm very happy to have discovered this option (alternative to juice or lemonade), because at least there's protein in them :)



Vanilla Pudding Pops: from Martha Stewart's Everyday Food, June 2008

2/3 c. sugar
1/4 c. cornstarch
1/4 t. salt
3 c. whole milk
3 large egg yolks
2 t. vanilla

Get a sieve ready over a medium bowl and set aside. In saucepan, off heat, whisk together sugar, cornstarch, and salt. Gradually whisk in milk, until dissolved. Whisk in egg yolks.

Cook over medium, whisking constantly (this can be hard with little ones around!) until the first big bubble sputters. Reduce heat to low and stir for another minute. Remove from heat and immediately pour through sieve into bowl. Stir in vanilla.

Divide among pop molds (I think next time I many try dropping a few fresh blueberries in each one, too!) and freeze.

Yum!

i was just telling someone (who?) that i wanted to try a recipe i saw (where?) for pudding pops.


is it straight pudding?

Thanks for sharing the recipe! I tried it, substituting 2 1/2 Tbsp. cocoa powder for the vanilla, and they were fabulous. Jan
