FAVORITE MAY RECIPE
After our strawberry picking and jam making day, we still had a lot of strawberries left. So, I decided to make srawberry pie! Here's the recipe. It's my great Aunt Phyllis's recipe, and it was given to me by my cousin, Elizabeth, at my wedding shower. Other berries or fruit can be substituted, as far as I know.
Strawberry glaze pie:
Clean a heaping quart (I used 5 cups) of fresh strawberries. Set aside one cup. Fill a baked pie crust (I just used plain, but I bet it would be good with one of those graham cracker crusts!) with remaining washed berries (make sure they're dry) and cover with glaze.
To make glaze, crush 1 cup strawberries and add 3/4 cup sugar + a pinch of salt. Heat. Separately mix 1.5 Tbs. cornstarch with 2 tsp. water. Add to the hot mixture and cook until clear and thick. Cool slightly and pour over berries in the crust. Be sure glaze covers the berries well.
Enjoy cold. With vanilla ice cream is best!
