ANOTHER FAVORITE RECIPE

I find myself wanting to post more than one recipe a month, and this month I'm just going to do it. We enjoyed this dish last night.

Pasta with Roasted Salmon and Asparagus

2 bunches asparagus
2 pieces of salmon (1 serving size each)
4 Tablespoons butter
pasta (we used the spiral kind)
1 small log goat cheese
2 Tablespoons chives
salt and pepper

Preheat oven to 450. In a shallow pan or cookie sheet, spread asapargus, cut in chunks around the salmon pieces. Cut up 1T of the butter and spread over the asparagus. Season with s & p. Cook in oven until tender and salmon cooked through -- about 10-15 minutes.

Meanwhile, heat salted water to boil and cook pasta. Reserve 1.5 cups of pasta water and drain the rest.

In a small bowl, cut up remaining 3T butter and goat cheese. Pour over 1/2 cup pasta water, salt and pepper. Whisk together until smooth.

Combine cooked pasta with cooked asparagus and salmon (broken up into smaller pieces). Pour sauce over all, and toss with chives. Add more s & p as needed. Add more pasta water as needed.

Serves about 4

One of my favorite ways to do salmon is like this:
On the same cookie sheet, bake salmon (1 serving size per person) and puff pastry, cut in to pieces the same size as the salmon. Bake at 400 for 10 minutes, or until salmon is done and pastry is brown and delicious.
Remove from oven. Spread pastry with pesto, cover with tomato, and put the salmon on top. Easy! Yummy! Only 1 dish to clean!
