BREAD
Okay, I'm inspired after reading Steph's post about bread. I enjoy making bread, but I'm feeling an itch to branch out a bit. Instead of turn to the internet or the Mennonite cookbooks, I'd like to hear from all of you. What is one of your favorite recipes? I like to make my mom's plain whole wheat and oatmeal bread, Suze's easy loaf, and Jen's cinnamon swirl. I'm looking for some new ones now. I know a lot of you reading this blog are bread bakers, so bring it on!

I love to make bread, too, but I think we make the same recipes (cinnamon swirl and oatmeal). I'm not sure if I have anything to contribute that's new, to be quite honest (or the recipe is in my dad's cookbook, like his dinner rolls).
I have a pizza crust recipe that we make bi-weekly. It's from Moosewood and it makes enough for 2 crusts (hence, why we make it bi-weekly). It's great, because we vary up the ideas of what to make with it: pizza, calzones, stromboli. It's pretty much a staple. If you're interested, I'd be more than happy to write it out (or tell you what page it's on if you have the same book).
I'd like to try new things like english muffins, more dinner/round loaf breads, and cinnamon rolls. I've been hearing a lot about the no-knead bread lately, too. That sounds interesting.
I could talk about bread for a while, as you can see. This is making me hungry. :)
i'd love to have the pizza crust recipe, Claire. The Moosewood books I have are the early, big brown one (maybe the original?) and Moosewood cooks at home. If it's in one of those, don't worry about getting it to me. Otherwise, that'd be great. I love making calzones, too. So easy.
The last time I tried my hand at baking was over five years ago. I don't really remember what the occasion was (I think Anna's birthday) but I wanted to bake a chocolate cake. Whenever I do any cooking I am very retentive about making sure all my measurements are exact and follow every step to the letter.
On this occasion I was quite proud of myself because the cake rose exactly how I expected and looked beautiful.
The problem became apparent when we each took our first bite. The sugar that I had meticulously measured was still sitting on the counter.
Believe me when I tell you that a chocolate cake without sugar is not the best tasting thing in the world.

Okay Katie, here are my contributions!
White Bread 101 - SUPER easy and quick.
3 c. flour (I use 1/2 wheat, 1/2 white)
2 T Yeast
1 1/4 t salt
3 T sugar
4 T butter
1/2 c non-fat milk
1/4 c potato flour or flakes
1 1/8 c luke warm water
Combine all ingredients and mix. Knead them together until you make a soft, smooth dough. Cover and let rise 1 hour.
Shape dough into 8" log and transfer to lightly greased 8 1/2 X 4 1/2 loaf pan. Cover and let rise 1 hour.
Preheat oven to 350. Bake 35 - 40 minutes.
Cornmeal Bread
Cook together, stirring often:
2 c water
1 t salt
1/2 c cornmeal
Bring above mixture to a boil, remove from heat, and add 1/2 c sugar and 1/2 c canola oil. Cool well. Add 1/3 c warm water and 1 1/2 T yeast, dissolved, to cooked corn meal mixture.
Add 4-6 c flour. Knead 5-10 minutes. Let rise till doubled. Shape into 2 loaves. Bake at 375 for 25 minutes.
Both of these recipes are from my mom and we love them!

Pizza Crust (From Mooswood Restaurant New Classics)
1 TBS yeast
1 tsp sugar
1 1/3 c warm water
-->Mix get that going for about 10-ish minutes
3 c white flour
1/2 whole wheat flour
1 tsp salt
1/2 tsp ground black pepper (sometimes I use oregano or sesame seeds)
2 tsp olive oil
1-2 c white flour for kneading (which I hardly need any of that, actually)
--> Mix that all together and then add the yeast
Let rise until double (usually takes less than an hour). Split dough in half and freeze one of them... or use both, depending on how hungry your crowd is.
Spread out on pizza/cookie sheet and put your toppings on. Bake at 425-450 for 15-25 minutes or until crust is golden brown. Since I have a gas oven, I bake it at 425 for 15 minutes. You can play with this.
I hope you like it! We've been making pizza/calzones every weekend for YEARS! It's a good one to make in a kitchen aid if you have one.
