
We had a yummy cake tonight that I thought I would post. It's an apple-blueberry upside down cake (yes, it is adapted from the Everyday Food recipe).
10 T butter, room temp
1/2 c. brown sugar
3 apples, peeled and sliced
1/2 c. blueberries
1 T. lemon juice
1.5 c. all-purpose flour
1.5 t. baking powder
1/2 t. salt
1/2 t. cinnamon
1/2 c. sugar
2 eggs
1 t. vanilla
1/2 c. whole milk
Preheat oven to 350. Coat bottom and sides of 9" round pan with butter (2T). Sprinkle brown sugar over bottom of pan. In a bowl, toss apple slices with lemon juice. Arrange apples in pan and sprinkle blueberries over them.
In a bowl, whisk together flour, baking powder, salt, and cinnamon. In a mixer, beat the rest of the butter and the sugar until fluffy. Then add gradually the flour mixture and milk (little flour, little milk, etc.). Add eggs and vanilla. Mix. Pour batter over the apples and blueberries and smooth over. Bake until toothpick comes out clean (45-55 minutes). Let cool in pan on rack for at least 30 minutes. Use knife to cut around edges, turn and serve. We had it with vanilla ice cream. (mmmmmm)
