MARCH FAVORITE RECIPE

For the recipe of the month, I've decided to post a delicious cake. Mark's dad is visiting, and we celebrated all the March birthdays in the house -- Mark, Ned, Karl, and Katie. Between Mark and Katie's families, we have 7 March birthdays!! My mom gave me this recipe, and it was a big success. If you love chocolate, you've got to try it. It's very moist and chocolate-y. If you like making healthy cakes, this is definitely NOT the one for you!

Double Fudge Chocolate Pound Cake

Cake ingredients:
6 oz. semi-sweet chocolate candy bar (I used dark chocolate)
4 oz. milk chocolate candy bar
2 T water
1 cup butter
2 cups sugar
4 eggs
2 1/4 cup sifted flour
1/4 t. baking soda
1/2 t. salt
1 cup buttermilk
2 t. vanilla

Preheat oven to 325. Grease and powder sugar a bundt pan. Melt chocolate in water over low heat. Cream butter & sugar. Add eggs one at a time. Add chocolate. Sift together dry ingredients. Stir 1/3 into chocolate until just blended. Stir in 1/2 of buttermilk. Continue to add dry ingredients and buttermilk in increments, ending with 1/3 dry. Blend in vanilla. Pour into pan and bake 1 hour 20 minutes, or till done. Cool in pan for 10 minutes. Turn onto plate and cool another 20 minutes. Pour on frosting while still warm.

Frosting ingredients:
6 oz. semi-sweet chocolate chips
2 T butter
2 T corn syrup (I used the kind made from brown sugar)
3 T milk

Melt chips in butter over low heat, stirring until smooth. Stir in syrup and milk, beating. Add milk to get a pourable consistency.

Oh, yeah!!!!!

We call this cake the "closing cake." We have made if for friends when they close on a house, saying that it is "so bad for you, you should only ever eat it when you close on a house."

Hope you had a nice visit with Ned.

ha! i wondered if this was the same...maybe this is what we should have for jerry's birthday...after all, that's only once a year...
